Fuelled by the wood of our forests, it perpetuates an ancestral know-how, where each flame tells the story of those who, before us, have watched over the patient boiling of this precious sap. A traditional method that gives maple syrup its rich and authentic taste, in harmony with nature and the rhythm of the seasons.

Maple Water

At the end of winter, when the forest awakens and the sap begins to circulate, it is the signal for the beginning of the maple water harvest. Thanks to techniques combining tradition and modern know-how, we carefully take this precious water, without harming the maple trees, respecting their natural cycle. Each drop collected is the result of a balance between the tree and its environment, marking the beginning of an ephemeral but essential season, where the forest offers us one of its most beautiful treasures.
