History
Used since ancient times, lovage has been prized by Mediterranean and Oriental civilizations for its aromatic and medicinal properties. The Romans and medieval apothecaries used it in both cooking and herbal medicine, making the plant a traditional ingredient in many recipes and folk remedies.
Origins
Native to southern Europe and western Asia, the levistic grows naturally in humid environments rich in organic matter, often along rivers or in shady meadows. Its adaptation to various climates allows it to be grown in many European gardens today.
Installation and planting
Lovage prefers full sun or partial shade and fertile, humusrich, welldrained soil. Planting is ideally done in spring or autumn. Seedlings or young plants should be spaced about 30 to 40 cm apart to promote good air circulation and allow for optimal root development.
Physiology
It is an herbaceous perennial that forms a rosette of large, aromatic, shiny, dark green leaves, giving off an intense fragrance reminiscent of celery and parsley. In summer, it produces small yellow flowers grouped in panicles that attract pollinating insects.
Plant management
Regular maintenance is essential to maintain its vigour. Clumps should be thinned from time to time to avoid competition between leaves and to encourage the production of new shoots. Dividing the rosettes every 3 to 4 years allows the plants to be renewed and to ensure harmonious growth.
Product Quality
The leaves of the lovage are highly prized for their powerful taste and characteristic aroma, which enhance many dishes (soups, sauces, stews). The seeds, which are less well known, can also be used as a spice. In addition, the plant is known for its diuretic, digestive and antiinflammatory properties, which makes it a valuable ally in phytotherapy.
Plant Protection
Lovage is generally hardy, but it can be prone to some fungal diseases if the soil remains too wet. Ensuring good drainage and regularly enriching the soil with compost promotes its health. In the event of an infestation of aphids or other insects, the use of biological treatments (nettle manure, insecticidal soap) limits the damage while respecting the environment.
Harvest
The harvest is done in summer, when the leaves have reached their full aromatic intensity. It is advisable to pick the leaves in the morning, after the dew, in order to preserve their freshness and volatile compounds. The leaves can be used fresh or dried to extend their use in cooking and herbal medicine, while the seeds are harvested when the levistic fruits naturally dry out in autumn.
